Golden Lupin Breakfast Waffles

A quick and easy waffle recipe that tastes great and is gluten-free as well as keto friendly.

Ingredients

  • 2 tablespoons lupin flour
  • 2 tablespoons Natvia Granular Sweetener*
  • 2 eggs
  • 2 tablespoons pure whipping cream
  • ½ teaspoon gluten-free baking powder
  • pinch of salt

Instructions

  1. Whip eggs in a small bowl
  2. Add all other ingredients and mix well
  3. Let the mixture sit while you preheat the waffle pan
  4. Poor ¼ of the mixture in the waffle pan, close, and flip over right away. Cook for 1 minute, then flip again and cook for a further 1 minute
  5. Enjoy!

Notes

* Natvia Granular Sweetener can be found in Woolworths and Coles. Alternative erythritol sweeteners are OK, but please note that 2 tablespoons of Natvia Granular Sweetener is equal to 4 tablespoons of regular sugar.
